I haven't used cheese much apart from putting it in paste occasionally. As for potato - the only time I have used it is when you need a bait that looks like a pellet that will not break down when on the hook, if you cut it into thin slices and then cut round pellet shaped pieces using a large breadpunch or lunchpunch then you put them all in a bag with some instant coffee and put it into the fridge overnight then you get brown potato pellets which can be hooked and never come off.
