Personally I'd give York a go, I love the place!

Hotels, B&Bs, pubs and restaurants GALORE. Can't comment on the clubs tho, I never go.

Also because there's loads of tourists you never get the "you're not from round 'ere so I'm going to belt you one" attitude, it's a lively place but with a very relaxed atmosphere, me & the missus go on the lash there quite often.

Fishing wise, the rivers Ouse and the Foss run right thru it and the Derwent's near by.
A few miles out of York and you've got lakes galore, Raker Lakes, Pool Bridge Farm, Forrest Farm and so on. In fact I think there's about 12 lakes in those three venues alone!
